All of our Beef is mainly Angus and Herefords which are locally sourced, enabling us to support our local farmers. We endeavor to source from within a 30 mile radius, however we have not yet exeeded 10 miles! All of the Beef we source is fully grass fed and finished on haylage resulting in a healthier and therefore happier animal.
Bucco is cut from the shin of beef. Kept on the bone and cut into slices, this cut is perfect for cooking long and slow.
